ROASTER'S NOTES:
Brazil is the largest producing origin globally, accounting for near one third of annual global production. Nearly all coffee production in Brazil is mechanized meaning coffee cherries are harvested, and post-harvest processing is done with machines instead of by hand. Growing regions tend to be lower in elevation and the terrain is less steep, allowing for the use of these mechanical harvesters. While output is large, this does not mean that great quality coffees are not available.
Santa Hedwirges is a farm in the Sul Minas region. It is 1,100 hectares, with roughly 850 hectares in coffee production. Hugo Brito is a 4th generation coffee farmer whose family has been managing “Hedwirges” with a focus on quality and the long-term sustainability of the farm for future generations. Water conservation and treatment practices are in place and agronomic inputs are used with longer term environmental health in mind.
This coffee is a natural process, meaning fruit is left to dry on the seed. It’s stored that way until it is milled for export.
