Two of the most exciting trends in specialty coffee come together in this remarkable release. The Pink Bourbon variety has quickly earned a reputation for its juicy, citrus-forward profile — a combination of bright fruit complexity and balanced sweetness. Believed to be an Ethiopian landrace, Pink Bourbon beautifully blends the signature vibrancy of Ethiopian coffees with the famed terroir of Colombia.

The second trend is the anaerobic washed process, a meticulous method that enhances flavor intensity and can even bring out new dimensions in a coffee’s profile. While this technique can sometimes lead to “funkier” flavors, this lot stays clean, expressive, and refined. Brewed in a V60, you might catch a whisper of the process’s depth, but the overall experience remains fruity, sweet, and dynamic without ever tipping into excess.

We were able to source only a small number of bags of this exceptional coffee. It’s a cup that bridges two innovations (varietal and process) into one harmonious, classically delicious expression of what makes modern coffee so exciting.

Learn More About This Coffee

This lot comes from Finca La Primavera, a second-generation farm that made the remarkable shift from cattle pasture to coffee cultivation in the mid-1990s. The farm began with traditional varieties like Caturra and Castillo, later embracing Pink Bourbon as part of its ongoing pursuit of quality.


Located on 18 hectares of land, La Primavera dedicates 8 hectares to natural reserve, preserving biodiversity alongside its coffee plots. Since 2005, the farm’s focus has centered on quality-driven production, reflected in both its careful farming practices and processing precision.


This washed anaerobic lot is depulped and undergoes an extended 72-hour fermentation, split evenly between 36 hours in sealed plastic bags and 36 hours of dry fermentation. The result is a clean, expressive cup that showcases the balance between innovation and the farm’s deep-rooted connection to its land.
