The natural process coffees featured and offered by Fazenda Ambiental Fortaleza (FAF) are painstakingly evaluated to ensure they do not present the sour flavors that can sometimes be found in natural or dry process coffees, and to protect against the possibility of over-fermentation. The result is a sweet and balanced, medium-bodied coffee with a pleasant acidity that can be fruit-forward without tart undertones. In the lab, our team is tasting plum, baker’s chocolate, and honeycomb in this outstanding cup.

We are excited to once again feature coffees grown under the leadership of Felipe Croce. Fazenda Ambiental Fortaleza has continued to lead the way in sustainable organic agriculture. Their goal is to share specialty coffee culture, as well as the application of sustainable methods, throughout Brazil.

The Bobolink name serves as a unifier for the coffee, as it travels some of the same distances as the unique New World blackbird for which it is named.

From FAF: "Bob-o-Link is a transcontinental migratory bird. We chose this bird as a symbol to bring all those in the supply chain closer together, without borders. Our Bob-O-Link coffees come from neighborhoods of family farms working together and sharing the same values of total quality."
