This coffee is produced in the highlands of Chiapas along the border of El Triunfo Biosphere Reserve. The reserve is the largest of its kind in all of Mesoamerica, and serves as a refuge for thousands of species of plants and animals. The co-op responsible for production in the area is Campesinos Ecologicos de la Sierra Madre de Chiapas (CESMACH). The co-op has a little over 600 members, over 200 of which are women. These 200 women producers represent 32 separate communities in close proximity to the reserve. This particular lot is produced by 18 separate women-producers, hence the “Café de Mujer” designation. The coffee is fully washed and then sun-dried for 8-12 days.
In the cup we find flavors of orange marmalade and nougat. The coffee is medium-bodied and sweet with a clean and crisp finish. This is an all-day drinking coffee and pairs well with desserts and breakfast alike.
